Candlemas or Grounghog Day

Hot Buttered Lemonide

3 cups water
1/2 cup sugar
2 tbs butter or margarine
1 tsp grated lemon rind
1/2 cup fresh lemon juice (about 4 lemons)
Garnish: thin lemon slices

Combine first four ingredients in a saucepan; bring to a boil, stirring until sugar dissolves. Stir in lemon juice; pour into mugs. Garnish with lemon slices.
Serves 4.

Snow Oranges for Candlemas

2 envelopes unflavored gelatin
1/2 cups cold water
1 (12 oz.) can mandarin oranges, drained (reserve syrup)
2 1/2 cups sugar
3 cups whipped cream

In a medium sized bowl, dissolve gelatin in the cold water. Add water to the mandarin orange syrup to make 2 cups. Combine the syrup and sugar in sauce pan. Bring to a boil over medium heat; boil for about 5 minutes. Add to the gelatin; stir until the gelatin is completely dissolved. Cool to lukewarm.
Slowly add the whipped cream to the gelatin. Pour into chilled 9 X9 inch pan.
Garnish with orange slices, pushing them down so that they are just visible through the surface. Try to make a pattern of a sun. Chill.
8 servings come out of this.
