Mabon (Autumn Equinox)

 

Apple stuffed Squash
1 Acorn squash
2 tablespoons butter
1 apple sliced
¼ cup brown sugar
½ teaspoon cinnamon
1 teaspoon sugar
1 cup of apple juice, cider or mead


Preheat to 350 degrees
Wash and cut the squash in half. Remove seeds and save for
crafts. Scrap out all stringy stuff.
Place in pan. Add sliced apples to the bowls of the squash. In a
bowl mix the sugars and cinnamon together. Sprinkle over top of
apples. Cut butter into small pieces. Place on top of the sugared
apples. Add juice, cider or mead to pan. Cover and cook for a
hour or so until tender. If you don't have a cover baste about
every 15 minutes with pan juices.

Three Sister Stew


The Oneida Nation (native American) I believe; taught the
settlers how to plant seeds to honor the three sisters (wow
sounds so close to the triple goddess if you ask me). They
planted corn, squash and beans together. The corn grew tall for
a pole for the beans to climb. The squash grew all around the
bottom to hold in water. They honor the three sisters in their
harvest. Make your three sister stew with corn, squash and beans
of our choice also. You may add other things as in onions,
carrots, potatoes, and whatever you have on hand or liked to eat.
You can add meat if wanted. Many tribes as in native, gypsy, and
others did plan their meals this way.

1 tablespoon of olive oil
1/4 cup chopped onion (if wanted)
1/2 cup chopped celery (if wanted)
2 cups of broth (vegetable or chicken)
1 cup of corn
1 cup of cooked beans (favorite or type on hand)
1 cup of chopped squash (favorite or type on hand)
1 bay leaf

add if wanted:
1/2 cup Carrots
1 cup of chicken or beef
3 potatoes peeled and chopped
1/2 teaspoon minced garlic (can use powder if wanted)
whatever on hand.

First sauté the onions, garlic and or celery until tender. If
adding meat; sauté now. Place in a big pot. Add the rest of the
ingredients and simmer for a hour of until veggies are tender.
Simple yet delicious!!!!




Apple Pie


Apple pie is another fall fav. I remember once as a small girl,
my grandmother ran out of cinnamon. She added cinnamon hearts to
the pie for the cinnamon favor. It turn a beautiful color of
pink! I loved this pie so I would ask for pink apple pie. A
favorite for fall time in my home. It is a very good inner child
food for me! But the apple pie can magickal as the cut on top
being a pentagram or whatever you are calling for. With the
cinnamon protective powers, works very well with apples power of
healing and love! Plus don't forget the element of fire to warm
your pie.
